55% Merlot – 40% Petit verdot – 5% Sangiovese

VINEYARDS
Family organic vineyards in Sant’Elpidio a Mare (Fermo), a small village in the centre of Italy.
Density for hectare: 3300 spurred cordon rows.

WINEMAKING
Harvest season: first decade of October.
The grapes went through extended maceration with an average of 9 days on the skins before being aged in concrete.

WINEMAKER TASTING NOTES
Dark dried cherries, mulled spices and black tea leaves, with a violet perfume emerging. Good primary fruit here too – black cherry, dark fresh plum. Medium body, with fresh and gentle acidity, ripe fruits, and faintly dry and fresh tannins.

WINE TASTING TIPS
Large bowl with narrower top directs wine to the tip of the tongue, allowing the drinker to detect flavour nuances.
The best temperature to serve Dàidalos is 18°C.

FOOD & WINE
It goes well with many meat dishes, even in tasty or spicy preparations, even up to game dishes.
