The harvest is determined by 3-parameter maturation curve: sugars, total acidity, pH. Thermo-conditioned vinification process for white grapes clarified by must flotation, temperature-controlledfermentation at 16\u00b0C.<\/p>\n

Passerina grapes are selected in the vineyard and subjected to a soft pressing.<\/p>\n

The must is fermented at a controlled temperature and then sparkled in an autoclave according tothe traditional Charmat method.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n

Pleasantly fruity, with a good aromatic intensity with a memory of wisteria flowers and apples.<\/p>\n
